Purpose:

To gently awaken the senses and digestive system after a night’s rest. This first course invites light acidity, brine, and herbal clarity — a thoughtful nod to European and Middle Eastern breakfast traditions where freshness is the prelude to warmth.

Components

Autumn Feta Salad

A chilled salad featuring crumbled feta cheese, halved grape tomatoes, parmigiana Romano, spinach and fresh herbs such as flat-leaf parsley or dill, and a squeeze of citrus (lemon or orange). A modest drizzle of extra virgin olive oil ties it together, and optional pomegranate seeds lend visual brightness and sweet contrast.

Presentation tip: Serve in a deep ceramic or stoneware bowl. Garnish with a sprig of basil or a dusting of sumac for colour contrast.

Pickled Cucumbers & Onions

Brined the night prior or up to a week ahead, using a vinegar base infused with garlic, mustard seeds, black peppercorns, soy sauce, red wine vinegar and dill. Sliced thinly to ensure elegance yet retaining crunch.

Pairing tip: Serve a modest portion in a small ramekin or side dish, allowing each guest to calibrate their desired level of acidity.

Juice (Orange or Mango)

Served cold in clear tumblers. Juice should be light in texture — avoid heavy pulp — to preserve a refreshing, bright profile.

A seasonal citrus note acts as both palate cleanser and energy cue.
